Is there a way to edit the date I added a movie to my database? Often times I won’t add a movie the day I get it. Or alternatively, recently I’ve decided to remove individual entries from a box set and re-add them as a single entry. Thus changing the added date to today instead of when I originally acquired it.
Unless I’m completely missing it, but I don’t see any way to do this in the app or website.

It is not possible to change the Added date/time as that is really the date/time it was added to your collection in your app.
What you can do is set the Purchase Date.
You can even use Pre-Fill settings (menu top left, then Prefill settings), then click the settings/cogwheels and add the Purchase Date field there.
Make sure to have the toggle set to “Always show”
Then add a movie, and the popup will show where you can fill in the Purchase Date and set it to whatever you like.
