I have one variant field that I look at on a regular basis (Canadian Price Variants). Would it be possible to set only that as a favourite folder (as opposed to the general variant field)?

But that is already available: choose “Variant Description” in that screen.
If I do that, then I have to scroll through all the variant types to find the one I want. Is there a way to just have the Canadian Price Variants shown here?
I am afraid not.
Have you tried using the search box at the top? Entering just “can” should give you the Canadian folder at the top?

Another tip could be to change the name of the “Canadian” entry to make it sort at the top. A bit of a dirty hack, but could work for you.
